TL;DR: Below…The Crazy, Simple Whole Chicken Recipe —>

Something is to be said about America’s beautiful people that struggle with weight loss.

What a great situation to be in - enough food to never worry about starving.

There’s a deep and dark story though, behind the abundance of food found on every block.

The short version: abundance of food does not mean abundance of nutrition.

Something else is to be said about listening to those that have lost weight after many trials and errors. A struggle that many face with finding nutrient-dense food is fighting the cravings of unnatural ingredients and cane sugar that dominate the brain, the body, and all other organs.

I tried a handful of dieting (scams). The kind where you pay for food delivery and the food arrives in “perfectly portioned” plates, ready to be heated up in the microwave. I’ve tried the shakes found at nutrition stores. The kind that taste like old chalk and makes my body crave something more than a grainy and icy slurry. I tried the “supplements” made to encourage people to lose water weight and those that claim that they can suppress hunger.

I tried sheer will-power to lose weight. I tried doing the gym often: trying memberships and new gyms. I’ve done the whole “go swimming!” deal. Fun, but not practical for my life at this time. I tried running, yoga, dancing, home fit videos. All the stuff. It really came down to whether I enjoyed the activity and if it could fit into my schedule (Crossfit? Yes. Random gym membership to try Zumba? Nope). I ran for months at a time, getting up to a few miles before losing my will power (focusing on losing weight does that to a person). I did 30-day yoga routines but stopped when my work schedule became too hectic. Short version of using sheer will power? It can work. The down side? If will power is focused on something slow to attain (ie losing weight, muscle gain, etc), it can sizzle out.

I enjoyed counting Macros for a few months. It truly was helpful. It created mindful eating habits quickly and most importantly, healthfully.

I tried Keto for a few months (mostly “lazy keto”). I liked it, especially when I could see a noticeable difference.

Then, due to a string of poor health events in my family, I stumbled upon the most effective and helpful diet…

The Westin A. Price Foundation (WAPF), was single handedly, the most healthy and long-term weight loss diet I have ever tried.

What’s interesting is WAPF (and Nourishing Traditions Cookbook) does not tout itself as a means of losing weight nor does it ask its’ readers to tediously track macros. It simply requests that every reader critically think about whether or not the food one eats is nutrient-dense.

TL;DR:

America has an abundance of food – but lacks an abundance of nutrition.

Pasture-raised (and healthfully fed) chicken contain much higher amounts of nutrients. For an in depth look at the macro and micro nutrients of pasture-raised chicken, follow this link. For comparison of pasture-raised chicken to conventionally raised, follow here.

Purchasing a whole chicken is not commonplace – but there’s multiple recipes to make with it…that are very simple! Below is a family staple-

A Simple Recipe for Baked Whole Chicken

(Use the highest-quality ingredients available to you! I have my own suggestions below the recipe)

Ingredients:

1. Whole Pasture-Raised Chicken

2. Salt

3. Pepper

4. Rosemary || or herb(s) of your choice ||

Directions:

Preheat oven to 375 (Fahrenheit)

Remove chicken from packaging and check the inside for any “extras” (ie gizzard, neck, liver, heart)

Place chicken in a pan

Apply salt, pepper, and rosemary (herbs) to your liking

1. Source from places like local farms (you can search for them on Instagram, Google, Facebook, etc), health-conscience food grocers, or from your own back yard

2. Redman’s Real Salt…is real salt, barely processed, and in orginal form. It also includes trace minerals that are mined alongside the salt

3. Haven’t found a great brand yet, however, buy whole peppercorns and grate as-needed. Pepper oxidizes and reduces its (((probably very micro))) nutrient density

4. Source fresh, organically-grown herbs when possible or at the minimum, organic dried herbs

You can learn more about WAPF here. This is the cookbook I use EVERY DAY. It has an overwhelming amount of researched-back information in the front half of the book and surprisingly easy recipes in the rest. Side bars of additional information fill each and every page. References for every fact are also listed.  It’s “pricey” compared to a cookbook found on the shelves at your local grocer – however, the amount of information, high-quality recipes, and references are worth every cent.
